The main objective of the project is the improvement in the conservation and treatment of fish by-products to preserve the quality of fishmeal and fish oils and improve the conservation of finished products.
To meet this objective, work is being carried out on three fronts.

  1. Studying the levels of biogenic amines in different fish by-products and transport systems.
  2. To evaluate the possibility of using enzymes during the thermal process that will allow both gaining energy efficiency in the process and reducing the exposure time of the proteins to high temperatures, generating a flour of better nutritional quality.
  3. Preservation of the final product from its production until it is received by the customer. Test antioxidant products that respond to new market needs, and define possible alternatives to the use of antioxidants, such as different types of protective atmosphere packaging.
